No Corncob Corn Pudding


Ingredients for this low calorie, low fat recipe are:


2 ten ounce packages of frozen corn, completely thawed

1 1/2 cartons of egg substitute (small cartons)

3 1/2 cups of skimmed milk

1/2 cup of refrigerated butter spray

4-5 Tablespoons of white flour

no calorie cooking spray

1/2 - 1 cup of Splenda - depending on personal sweetness


Mix together egg substitute, flour and Splenda together. Add butter spray and milk and mix until fully incorporated. Carefully add corn and mix again, very slightly.

Pour into a large baking dish and place into a 350 degree pre-heated oven. Bake for about 40-45 minutes - until pudding center is solid and pudding top is golden brown. Allow to sit until slightly cooled.


Calories: Enjoy 1 cup for about 150 calories.
